In a medium sized bowl, pour water and add 1 tsp sugar. Sprinkle over yeast and let soak for 15 to 20 minutes.
In another large bowl, mix flour, 3 tbsp sugar, and salt. Cut butter into pieces, then add to flour mixture. Use pastry blender to cut butter until crumbly. Add milk, eggs and yeast mixture. Mix well to make a soft dough.
Place dough in a container with a lid, and let stand in refrigerator overnight.
In the morning, divide the dough into 4 parts. Mix 1/2 cup sugar with cinnamon. Roll or portion the dough using some of the sugar/cinnamon on both sides and roll it into a circle. Cut in wedges as you would a pie, and roll from the wide end to the narrow end. Place the narrow end on the bottom of a greased cookie sheet.
Bake at 350⁰F for 10 to 20 minutes.
